But first, a note from the writer…

When a friend suggested that what I was setting out to do was write a “BBQ Bible”, I not only confirmed it, I went a bit overboard with the concept. As is the case with a certain text, there is an old guard of barbeque which primarily started on the Missouri side of Stateline, and a newer wave which largely first showed up in Kansas. From my standpoint, the parallels of the overblown format work quite well for that reason.

After months of work, and years of traversing this city’s barbeque scene, this is the second part of a two-part guide. This is meant to be more of a resource. It’s likely you won’t read it all in one go, and that’s ok! You may be well served to check out the first part HERE, especially if you’re looking for barbeque recommendations on the Missouri side of Stateline. For all the places I have been to, you now have my honest recommendations. For those I haven’t, they will come in time. This is an account of MY journey through the World Capital of BBQ. Allow it to be YOUR guide to a similar quest.

Part II: The Kansas Testament

Far out, in the uncharted plains of the unfashionable center of the Heartland of America, lies a small, well-regarded, barbeque mecca.

This is an abridged account of the barbeque history of Kansas City, a Cowtown, The World Capital of Barbeque.

Henry Perry begat Kansas City barbeque. Henry Perry employed Charlie Bryant, and Charlie’s brother Arthur. Henry Perry was also employer to Arthur Pinkard.

At his passing, Henry Perry willed his restaurant to Charlie Bryant, who then sold it to his brother Arthur. Arthur added molasses to Perry’s signature sauce and gave birth to the Kansas City style.

So Perry came before them and said, ‘All authority in Kansas City has been given unto me. Therefore, go and smoke the meat of all species, dousing them in sauces of vinegar, and of cayenne, and of lard, and teaching others to cook in the way I have taught you. And surely Kansas City barbeque will be with you always, until the very end of days.

Arthur Pinkard teamed up with George and Arzelia Gates and gave birth to Gates Ol’ Kentucky.

George and Arzelia Gates begat Ollie Gates. Gates Ol’ Kentucky became Gates & Son’s Bar-B-Q; Gates & Son’s Bar-B-Q became Gates Bar-B-Q. Ollie Gates expanded Gates Bar-B-Q and brought forth multiple locations in Missouri and Kansas.

In the age of Henry Perry, Fritz and Rose Plapp emigrated to Kansas City. Fritz used skills from his homeland to make German-style sausages. In doing so, he gave birth to a smokehouse and meat market that has stood the test of time.

Similarly, Anthony Rieke married Alda Sieleman. Alda was sister to Tony Sieleman. The three of them opened The Bucket Shop, where they sold half-gallon buckets of beer for a quarter. They started smoking meats and the Bucket Shop became Rosedale Bar-B-Q.

Not long after, “Big Jake” Edwards opened Edwards’ Old Southern Pit Barbecue. Jake Edwards begat Danny Edwards. Danny Edwards opened Lil’ Jake’s Eat It and Beat It. Lil Jake’s moved to Southwest Boulevard and became Danny Edwards’ BLVD BBQ.

Bill Snead bought a farm outside Belton. On the corner of that farm he built a pit. He became known for the burnt chunks of ham and brisket that he served and declared them to be “brownies”.

Calvin Trillin told the world about Snead’s brownies, and the burnt chunks of brisket that Arthur Bryant gave away. The most iconic meat in Kansas City, the burnt end, was born. In this time, national interest in Kansas City barbeque also grew.

Russ Fiorella started selling barbeque from a storefront and named it Smoke Stack Barbecue. Russ Fiorella begat Jack Fiorella. Smokestack Barbecue became Hatfield’s & McCoy’s; Jack Fiorella married Delores and the pair opened Fiorella’s Jack Stack Barbecue.

Jack Stack created cheesy corn, and the most iconic Kansas City barbecue side dish was born.

Norbert Zarda opened up a chain of burger stands across the city. Norbert begat Jerry, Mike, and Steve. The three brothers opened Zarda Bar-B-Q in Blue Springs.

At Rosedale Bar-B-Q, Ron Williams mopped the floors and washed the dishes. Then he took what he learned and opened up Wyandot Barbeque. And then, he opened a second location.

Johnny White created Johnny’s BBQ. Johnny White begat Eric White; Eric White kept the Olathe location of Johnny’s open after Johnny retired.

Rich Davis started selling his KC Masterpiece barbeque sauce. It became a national sensation that made the Kansas City style of sauce the default style of barbeque sauce across America.

Leavy Jones was a pitmaster at Hezekiah’s. Leavy begat Deborah and Mary. Deborah and Mary Jones opened Jones Bar-B-Q after Leavy’s passing. They sold bottles of their father’s signature sauce by the thousands.

Bill Chaney built a brick pit for L.C. Richardson. L.C. created L.C.’s Bar-B-Q. Tausha Hammett, the granddaughter of L.C., keeps his spirit and barbeque alive for a new generation.

Darioush Ghasemi sought to elevate barbeque and opened Smokehouse Barbecue, taking barbeque from no-frills to definite frills. Eventually, others followed suit.

Lindsay Shannon and Jo Shannon employed the competition team of The Nickleboys. Brothers Jimmy, Mike, and Kenneth Nickle were instrumental in opening BB’s Lawnside BBQ where barbeque and live music could be enjoyed together. Mike Nickle never left.

For Arthur Bryant so loved Kansas City, that he gave us the beef burnt end. That whoever should dine on them would not perish, but always be well-fed.

Frank Schoegel II sold wood for barbeque. Frank Schoegel II begat Frank Schoegel III. The younger Schoegel realized they already had the best wood so they may as well smoke some meats, and opened Woodyard Bar-B-Que.

Commercial and recreational barbeque gave way to competition. Kansas City became home to the American Royal World Series of Barbecue. Competitions gave way to champion pitmasters who sought the challenge of running their own restaurant.

Jeff and Joy Stehney won some competitions. They befriended Joe Don Davidson, the founder of Oklahoma Joe’s Smoker Company. With Davidson, the Stehney’s opened up Oklahoma Joe’s in a gas station. Oklahoma Joe’s became Joe’s Kansas City Bar-B-Que. When Joe’s threw some onion rings and provolone on a brisket sandwich and created the Z-Man, the BBQ specialty sandwich was born. Or, it at least became all the rage.

Phil and Linda Hopkins, inspired by competition success, opened Smokin’ Guns BBQ. Similarly inspired, Todd Johns opened Plowboys BBQ. Brothers Mike and Joe Pearce opened SLAP’s BBQ in Strawberry Hill.

Classically trained chefs began to barbeque. Rob Magee had success with his scratch-kitchen, elevated take on brisket, and other barbeque staples. He opened Q39.

Traditional barbeque gave birth to the competition circuit which created competition-style. Elevated and chef-driven barbeque gave way to craft barbeque. Soon people of all backgrounds and all nations gave each style their own twist. Barbeque was fruitful, and did indeed multiply. Soon, the land overflowed with barbeque of all styles and smoked meats of all cuts and species.

So from the time that Henry Perry started selling meat from his pushcart to last weekend’s latest barbeque pop-up, there have been six generations. Six generations of low ‘n slow in Kansas City. Six generations where the world’s best barbeque has been Kansas City barbeque.

Regardless of if it was from a pushcart, or from a stand; from a truck, or a restaurant, shack, or pop-up;

Whether it was competition style, or craft, or traditional, or elevated;

Whether it was pork or beef or chicken or turkey or lamb, or any other fish or bird, rodent or beast;

Henry Perry brought forth commercial barbeque in Kansas City. From that moment it was clear that BBQ had always been part of this city, and always will be.

Around the world, many did not know of Kansas City until it brought forth this gift; but when they heard the good news, they named this the World Capital of BBQ.


There is a movement to name the new Kansas City International Airport after Henry Perry, Kansas City’s original “Barbecue King”, and give him long overdue recognition in this city. CLICK HERE to sign the petition!


 

The Gospel of Johnson

Johnson County has over 600,000 residents, making it the most populous county in all of Kansas. It was named for Thomas Johnson, a missionary who established the Shawnee Methodist Mission. Johnson County is comprised of Bonner Springs, De Soto, Edgerton, Fairway, Gardner, Lenexa, Leawood, Merriam, Mission, Overland Park, Olathe, Prairie Village, Roeland Park, Shawnee, Spring Hill, and Westwood, among others. Olathe serves as the county seat.

By way of Overland Park, Johnson County is the home of comedic actors Jason Sudekis and Rob Riggle. Through Lenexa, it is also the home of Paul Rudd.

Blind Box BBQ - Shawnee* - Est. 2015
13214 W. 62nd Terrace, Shawnee, Kansas

Blind Box BBQ is a part of the new wave of barbeque joints that inundated Kansas City in the mid-2010s. Not quite fine dining, and not quite a traditional barbeque joint, Blind Box is happy to exist somewhere between the two. Most famously, Blind Box is known for two unique offerings - their Sunday barbeque brunch and their sauce being served out of warming dispensers.

So, What Do I Get? If you have the opportunity, go for Sunday brunch! How many places in the metro offer a barbeque brunch? I can count them on one hand and truth be told, I don’t need all the fingers. The ability to get their ribs, wings, and other smoked meats on the buffet alongside breakfast favorites, multiple genres of lunch dishes, a wide selection of sweet treats, and inventive dishes that are a fusion of barbeque and breakfast (their Blind Box Benny with smoked ham, the barbeque meatballs, and the immaculate jalapeño cheddar grits all come to mind!) is too good to pass up! Especially considering the buffet is the price of a platter at most joints. Additionally for the brunch crowd, bottomless mimosas or Bloody Mary’s are an option. If you’re going any other time, there’s a few great options. The Loaded Mac & Cheese topped with their sensational burnt ends is sure to satisfy. A combo plate is also hard to beat. The spare ribs, pulled pork, burnt ends, wings, sausage and turkey are all top choices. The specialty sandwiches are also fantastic. Blind Box has a strong line-up of sides but no matter what you get, do not go to Blind Box without ordering the cheesy Corn Bake (and yes, it’s offered on the brunch buffet!). Blind Box’s corn bake is, hands-down, the single-best take on cheesy corn in the entire city! If cheesy corn is not your thing, the mac and cheese or sweet potato fries are the next best side options.

Buyer Beware? Nothing worth noting.

Brobecks Barbeque - Est. 2007
4615 Indian Creek Parkway, Overland Park, Kansas

In 2007, Stillwell Smokehouse relocated from Stillwell to its current Overland Park location and became Brobecks Barbeque. Despite a change in name and city, Brobecks continues it’s proud no-frills tradition. What makes them unique is that they were one of the first in Kansas City to serve their meats dry - without sauce. They choose to let their meat quality and dry rub do all the talking. However, they do have a great trio of sauces on the side. They were one of the first, if not the first, in the city to offer a mustard-based sauce. The mustard and original varieties come standard, while their spicy is available upon request.

So, What Do I Get? You have to kick things off with an appetizer of the Smoked Ham Salad. Not only is it unique to Brobeck’s, but the regulars will run you away if you eat there without giving it a try. Served with both crackers and a heaping portion of their sensation house-made chips, this dip is their most well-known dish! (Mix in a tablespoon or so of the mustard sauce for a very special treat!) As far as the meal goes, the Burnt End Dinner with sides of Baked Beans and Macaroni & Cheese (particularly the white cheddar variety) is the surefire way to go. Or perhaps opt for a side of fries so you can dip them in the amazing trio of sauces. Brobeck’s mustard-based is the best version of that sauce in the entire metro. The surprisingly large babyback ribs are another top-notch order. Fortunately, both the babybacks and spares can be purchased by the bone as an add-on! If you’re a sandwich person, then it has to be the Smokey Joe. This creation, which is essentially a barbeque Manwich of assorted smoked meats, is a favorite among the regulars.

Buyer Beware? Of having to wait for a table during the lunch and dinner rush. For those who know it, Brobecks is the place to be!

Buck Tui BBQ* - Est. 2022

Buck Tui BBQ is a unique concept within the local barbeque scene. A fusion of Thai tradition with American barbeque influence, this amalgam of flavors is definitively Kansas City barbeque - just in a way you have likely never had before.

So, What Do I Get? Go ahead and just order that appetizer of brisket rangoon, you know you want to! When it comes to the barbeque plates, the two meat plate, served on a bed of jasmine rice, is a fantastic way to go. While all the meats are great choices, I have to recommend going with the thick-cut brisket and the Isaa Thai sausage. For the side, consider either the papaya slaw or the mac & cheese. If you do have a large enough group, the “Big Buckin’ Platter” is a great way to try all the things! You’ll just need at least five people to have a chance at finishing it.

Buyer Beware? The Tiger Sauce. It’s wonderful but it does pack a serious punch! It’s not for everyone. Also, aside from the “Big Buckin’ Platter”, there’s not a lot of flexibility in the menu. If you want to try a bunch of things, the best way is to go with a group of people. Luckily, the portion sizes are quite generous.

Burnt End BBQ - De Soto* - Est. 2010

Burnt End BBQ was founded in Overland Park, Kansas by Stephen “Smoky” Schwartz. Schwartz has an extensive resume that spans several iconic Kansas City barbeque joints and restaurants, and also includes success on the competition circuit. In July of 2024, Schwartz closed the original location not long after opening this location in DeSoto, citing the unsustainability and challenges or operating both stores. Burnt End BBQ also has locations at Crown Center as well as in Denver, Colorado!

So, What Do I Get? Well as the name implies, this is a great place to get some burnt ends. The Burnt End Platter is a great way to sample beef and pork burnt ends, as well as a few sides. The standard fries that come with are exceptional, and the slaw is quite good as well. However, it’s hard to not want to dig into the other sides. The baked potato salad (served warm) is cheesy and fantastic. The beans are a true pit bean packed with meat scraps and onion crystals. They possess a nice balance of sweet, savory, and smoky, with a little kick on the end for good measure. The one side that is a must here are the Fried Cornbread Bites. Served with a side of honey butter, these delights are more like a dessert than a side, which is all the more reason to get them.

Buyer Beware? Once known for massive serving sizes, shrinkflation has definitely hit Burnt End BBQ. The number of sides have dwindled and any substitution on platters carry a two dollar upcharge. It makes no sense given all of their sides are equally priced at four dollars apiece. It is a far better investment to just add on a side than to make a substitution. Lastly, while I love smoked turkey and macaroni & cheese, this is not the place for either.

Crazy Good Barbeque - Bar & Eats - Est. 2012

Crazy Good Barbeque was born from the competition circuit. Part barbeque joint, part traditional restaurant, and part catering company - Crazy Good Eats remains an Olathe favorite.

So, What Do I Get? Whatever you do, order the bone-in smoked chicken! The only way to describe it is CRAZY GOOD! Whether you get the 1/4 bird or a 1/2 bird, this is the best smoked chicken you will find in Kansas City, or anywhere! It is hard to believe that such massive pieces of smoked chicken can be both so crisp and that juicy. The texture of the skin, and the overall flavor is something else! Consider getting the Ribs ‘n Chicken plate and pairing it with their babyback-style ribs. If you’re there on a Saturday night, their amazing chicken comes bacon-wrapped and stuffed with jalapenos. This is a real treat! As for the sides, the Loaded Potato Casserole is the best side on the menu, but the Burnt End BBQ Beans are a very close second.

Buyer Beware? The widely advertised Chocolate Brioche Bread Pudding is a bit of a letdown. Luckily, you won’t have much room for dessert anyhow.

Fritz’s Meats & Superior Sausage - Est. 1927

One of Kansas City’s oldest barbeque joints, Fritz’s Meats is equal parts restaurant and butcher shop. Family recipes from Fritz Plapp (a master sausage maker who emigrated here from Germany) combined with Kansas City barbeque tradition makes this shop on Stateline truly one-of-a-kind.

So, What Do I Get? In a place that was founded as a sausage house, don’t be surprised when I tell you the Sausage Burnt Ends are a must! The medley of assorted links that are burnt, chunked, and tossed in sauce is a Fritz’s original. Be careful though, the occasional hot link in the mix will get you! Speaking of originals, another way to go is the Bette Rogers. Fritz’s likes to claim their signature sandwich is the best in the city. The combination of smoked brisket, ham, bacon, artichokes, and other veggies piled high on a split-top Roma roll is almost like a barbeque Muffuletta. The half chicken is compact but juicy and flavorful. Among the sides, the potato salad is the clear winner.

Buyer Beware? There’s a lot going on with the beans. The extremes of sweet and seasoning is not for everyone. Also, remember this is a butcher shop. While there is dining space, the butcher paper wrapped around your order will be your plate. However, that’s a large part of the charm!

Harp Barbecue - Est. 2019

Originally operating as a pop-up out of Crane Brewing, Harp Barbecue eventually moved to a standalone restaurant on Raytown Road. Credited by many with bringing the Central Texas style of craft barbeque to the Kansas City metro, Harp Barbecue is renowned for their thick-sliced briskets and inventive sausages. The restaurant which lovingly earned the nickname “Traytown”, relocated from Raytown to Overland Park, Kansas in October, 2024.

So, What Do I Get? Harp is primarily known for two things above all - their brisket and their sausage. Their brisket is thick, juicy, and melts in your mouth. The sausage varieties are creative and they frequently rotate (Blueberry / White Cheddar and Garlic / Black Pepper are just two of the awesome varieties). The Truth Bomb sandwich, which features chopped brisket and the sausage of the day, can be a great way to sample both. The best meat on the menu, when offered, has to be the Salted Caramel Burnt Ends. The melty, decadent blend of smoke and sugar are unlike anything else in KC! The Tennessee Pulled Pork is vinegary and robust. It’s rich tang stands in contrast to many other pulled porks offered in the city. When it comes to the sides, the Sweet Potato Burnt Ends are king. They are large chunks of smoked sweet potato with an idyllic texture and a fantastic glaze. When offered, they work as a side or a unique vegetarian BBQ entrée.

Hayward’s Pit Bar B Que - Est. 1972

Hayward’s Pit Bar B Que describes themselves as a “longtime barbecue fixture in Johnson County”. In one location or another, Hayward’s has served the people of Kansas City classic, hickory-smoked barbeque for over 50 years. They have always been a neighborhood gathering place and terrific spot for Happy Hour or catching the game.

So, What Do I Get? Hayward’s has always been a place for platters! And the portion sizes are quite generous. More than anything, this is a place known for great smoked wings, burnt ends, and their thick-cut St. Louis-style spare ribs. The Ribs & Burnt Ends Platter, Burnt Ends & Wings Platter, and the Ends & Ends Platter (beef and pork belly) are all sure to satisfy. The burnt ends are simply elite! If you do go for the wings, there’s a variety of options but tossed in the spicy barbeque is the preferred method. Check out the daily specials as there are always great deals to be had on their best meats! There are so many excellent side options but the mac & cheese is exceptional. The sweet potato waffle fries, fried okra, and house onion rings are also strong options.

Johnny’s BBQ - Est. 1977

Johnny’s BBQ has been a Johnson County staple for decades. It was founded by Johnny White who initially learned the ropes at the historic Rosedale Barbeque in Kansas City, Kansas. While Johnny stepped away from the business and shut down the Mission location in 2020, his son Eric continues the family legacy in Olathe to this day. There is perhaps no BBQ spot in the entire Kansas City metro that balances quality with affordability the way Johnny’s does.

So, What Do I Get? Johnny’s has always been a destination for burnt end lovers! They offer three varieties - traditional beef burnt ends, pork burnt ends, and rib (tip) burnt ends. While all three are excellent choices, the beef burnt ends rule the roost with the rib tips coming in at a very close second. The beef burnt ends are so full of flavor, exquisitely charred, and exactly what you hope for them to be. The rib tips are as good as you’ll find in the city. The half-chicken is another popular option. While a little on the dry side at times, the crackle of the skin, the smoky flavor, and a side of their hickory sauce more than make up for that. When it comes to the sides, it’s hard to go wrong. Their fried pickles are justifiably lauded. The beans are chock full of beef chunks and onion slivers. They’re sweet without overdoing it. The white cheddar mac ‘n cheese is a solid option too. Whatever you do, get an order of their famed onion rings. The hand-breaded, crunchy side is perfectly made and an absolute must.

Buyer Beware? The daily lunch specials! Johnny’s is already one of the more affordable authentic barbeque joints in the area but their lunch specials make eating here even friendlier on the wallet. Anything offered is always worth a look! Additionally, this is an old school joint that will sauce the meats. If that’s a deterrent, be sure to ask for your meats with the sauces on the side.

Jonathan’s Wood-Fire BBQ & Seafood - Est. 2020

Located in a strip mall off Nieman Road, Jonathan’s Wood-Fire BBQ & Seafood is a Cajun / Creole-inspired seafood and comfort food restaurant known for their daily comfort food lunch buffets and seafood boils. They do boast a very robust barbeque menu known for its Cajun flair. Always a fun tidbit, the smoker at Jonathan’s is purportedly refashioned from a defunct Japanese World War II submarine. As opposed to ordering at a counter or with a server at your table, the restaurant employs the use of giant touchscreen kiosks for all food and drink orders.

So, What Do I Get? The restaurant clearly takes pride in their house Cajun seasoning (which is quite nice) because it shows up on everything. When it comes to the barbeque, the meat of choice is clearly the smoked chicken. They do a solid job on this bird with good flavors and moisture throughout. The house seasoning works so well with the flavor of the bird. The real excitement here is around the sides. Anything deep-fried from Jonathan’s is sure to please! And they all pair nicely with the house BBQ sauce. While I love the fries and okra, the best deep-fried side item is easily the deep fried corn on the cob. This is the best version I have ever had of this dish, and the only time I can recall having it in Kansas City. The combination of breading, seasoning, and juicy corn kernels within is sublime. The pineapple baked beans are unique and have a richness and fruity profile you won’t find in any other pit bean. If you enjoy pineapple, they’re a must! The sweet potato rounds are EVERYTHING. Nicely sliced with good flavor and crispy sides, this is also a top tier side.

Buyer Beware? Nearly every single smoked meat on the menu. The pork ribs are grossly overcooked and incredibly fatty. The brisket and pulled pork are both chopped, dried out, and lack any flavor beyond the signature seasoning. Overcooked seems to be a common trend with their smoked meats. Also, if you are spice-averse, their spicy sauce is one of the hottest in the city! Tread with caution. That being said, this is actually a great restaurant. I strongly recommend the boiled shrimp, fried seafood, and other Cajun and comfort food favorites ten times over. They may have the best shrimp dishes in the metro! I look forward to each return visit but I also know I won’t order barbeque here again.

Meat Mitch* - Est. 2021

For years, Meat Mitch had been known as the brand of sauces served at Westport’s Char Bar. What might not have been known is that Meat Mitch was actually the award-winning competition barbeque team behind the Char Bar concept. Branching off into a separate concept that bears the team’s name. Meat Mitch’s menu does have some cross-over with Char Bar, but features an expanded sauce line-up and list of menu offerings that are all their own.

So, What Do I Get? While it claims to serve two, take two or three friends with you and get the Pitmaster Platter. The massive plate features beef burnt ends, brisket, three rib bones, turkey, sausage, and three sides. The beef burnt ends, brisket, and pulled pork are the clear-cut stars of this platter. When it comes to the sides, you should definitely sub out the French fries for an order of Sticky Curly Fries, which are traditional seasoned curly fries tossed in honey. They’re so tasty! If you’re in the mood for a sandwich, a pulled pork on bun or either of the Toasted Grilled Cheeses are great options. The Pigmento is a personal favorite! As far as starters go, the Smoked Buffalo Chicken Suckers are a must.. Whatever you do, you’re doing yourself a disservice if you don’t sample all the sauces. Meat Mitch has a diversity of sauce styles with different bases that is rarely matched in the metro.

Moose’s BBQ & Catering is a food trailer that does private catering but also operates for regular restaurant hours in a parking lot in downtown Gardner, Kansas. It is a black trailer marked by large black banners advertising “BBQ” that opened during the COVID-19 pandemic. Prior to that, they had a restaurant in Baldwin City, Kansas.

So, What Do I Get? The XXL Loaded Sausage Sandwich, specifically with Smoked Jalapeno Sausage, is one of the top three barbeque specialty sandwiches in the city! I said as much when I ranked the city’s best barbeque specialty sandwiches in January of 2023. It’s a split sausage of your choice, pulled pork, smoked bacon pieces, and gooey white queso all on a pillowy soft bun. If you’re going for just some meats, a platter with brisket and either their Smoked Jalapeno Sausage or the Smoked Polish Sausage (or both!) is a great option. They also do a solid rack of ribs. For the sides, the mac ‘n cheese is wonderful and must-order.

Buyer Beware? The beans are quite fantastic but have a bit of a kick. The spice-averse should tread with caution.

Mr. P’z Bar & Grill - Est. 2014

Formerly Fireside BBQ, Mr. P’z is a restaurant that lands somewhere between sports bar and scratch kitchen, that serves a number of barbeque-inspired dishes and traditional smoked meats.

So, What Do I Get? The appetizer line-up is an all-star one. The BBQ Rangoon (smoked cream cheese, brisket, and rib meat stuffed in a fried wonton) is one of the best barbeque appetizers in the city. The waffle-battered sweet potato fries, with maple syrup on the side, are awesome. However, for both the Rangoon and the Fries, the sweet chili sauce that comes with the Rangoon is the preferred dipping sauce. As far as the meats go, the pulled pork is the strongest of the bunch. If you like an extra lean burnt end, that is also an option here.

Buyer Beware? I will go on the record and say it. I am not entirely convinced that Mr. P has a smoker on site. The meats taste and feel as if they’re oven finished and even seems to be residue of Liquid Smoke. I would be happy to be proven wrong but based on the flavor, texture, and never having seen a smoker there, it’s a fair assumption. The non-traditional “smoked” dishes and the items that incorporate barbequed meats are much better than many of the meats on their own. Most of the meats can be avoided. Since they re-branded as Mr. P’z, this feels more like a bar that dabbles in barbeque than it does an actual barbeque joint.

Point & Flat BBQ^ - Est. 2022
Lenexa, Kansas

Point & Flat BBQ is a craft-style barbeque trailer based in Lenexa, Kansas that does pop-ups and private catering events throughout the metro. The non-descript black trailer has quickly gained a cult following.

So, What Do I Get? They named their venture after the two parts of the brisket (the point and the flat) for good reason. Simply put, they are brisket savants. The craft-style, Texas-inspired brisket is thick-cut, rich, full of flavor, and has the most picturesque char. The way that each tender morsel just melts in your mouth; there are few like it in the city. Their brisket is a must! That said, the pulled pork is also quite fantastic. Point & Flat also has a strong reputation for their ribs and does a phenomenal jalapeño cheddar sausage. The casing is so crisp and has a perfect pop and texture. Whether you go with one or both, don’t forget the pickled onions which are a delightful accoutrement. As for the side dishes, the brisket baked beans are a must. Wonderful notes of brown sugar and molasses and, you guessed it, packed with chunks of that amazing brisket! The other sides are similarly strong. The street corn topped with a Mexican cotija cheese is well-made. The sleeper on the menu though is the slaw. The vinegary slaw with fresh jalapeño slices is impeccably balanced and easy to overlook. While the beans get all the (deserved love), this slaw is special and some of the city’s best.

Buyer Beware? As is the case with any pop-up, trailer, or truck, simply finding a chance to be where they are is always going to be an issue. Of course, sell-out also becomes an issue. As they grow, always plan to arrive on the earlier side of their posted hours.

A Mission staple the past twenty years, RJ’s Bob-Be-Que Shack is a favorite among locals and an award-winner on the regional and national scale.

So, What Do I Get? More than anything, RJ’s is a standard-bearer for shareable barbeque meals. Their smoked wings, St. Louis cut spare ribs, and beef burnt ends are all phenomenal. Luckily, they have a platter aptly named the “Wings, Ribs, & Burnt Ends” for that! The brisket is also quite fantastic and a great choice if you watn to go the “meat-on-bun” route. RJ’s has the distinction of being one of the few local barbeque joints to serve breakfast, and one of the very few to serve mutton. The breakfast is great and the Denver Cut Lamb RIbs are a hit! Well-seasoned with one of RJ’s signature rubs, the perfectly tender, yet lean, mutton bones are sure to please. There are a number of fantastic side options to be had, but the Cheesy Cornbake is the cream of the crop.

The Rub Bar-B-Que* - Est. 2011

The Rub in Olathe likes to describe themselves as traditional Kansas City barbeque with a twist. They are known for serving dry-style barbeque that highlights their rubs and their unique offerings, such as their bowls that feature a mix of smoked meats and sides.

So, What Do I Get? First things first, can we just have a chat about the Sugar Crusted Corn Bread?! Whatever you get, as long as you get your hands on one of these divine squares of corn meal and sugar, you’re doing something very right. I don’t know what else to say. Can cornbread be lifechanging? When it comes to the meats, the star on the menu is the sausage. The Polish-style link has such an ideal pop to the casing, and the meat within just melts in your mouth. The pulled pork and burnt ends are also great choices here. The mac ‘n cheese and the hash, cubed fried potatoes, are elite sides. Since The Rub is known for their bowls, this is the best option. A Hash Bowl, Mac & Cheese Bowl, or Baked Potato Bowl topped with a meat of your choice, preferably the sausage or pulled pork, is going to leave you very happy. Whatever you do, just get some of that cornbread. In case, I didn’t already mention that.

Buyer Beware? Feel free to pass on the chicken. The Rub is not the place for it. If a fall-off-the-bone rib is your thing, The Rub probably has the best version of that cook.

Shawnee’s Bates City Bar-B-Que - Est. 2000

Shawnee’s Bates City Bar-B-Que is the secondary location of the long popular Bates City Bar-B-Que in, you guessed it, Bates City, Missouri. However, for nearly a quarter century, the Quivira Road edition has been serving the same meats and dishes that made the original so popular, while offering an expanded menu that gives this place its own flavor. It’s worth checking out The Missouri Testament (The Book of Lafayette, “Bates City Bar-B-Que*”) for recommendations that do apply to this location, but it’s also worth nothing, this is its own place. What makes it special is that Shawnee flair and the specialty items that put a twist on Bates City faves.

So, What Do I Get? Anytime that the first thing that’s recommended at a barbeque joint is the fries, it may seem like cause to hit the panic button. This is a genuine recommendation as both version of Bates City Bar-B-Que have the kind of fries that dreams are made of. I’m wild about the beans and the slaw here as well. For that reason, The Clusterfluck is a must. Amazing fries topped with beans, slaw, and a meat of your choice. For me, the star of the smoked meat line-up is the pulled pork so that’s the topper here! Pork burnt ends are also a solid choice. Speaking of the slaw and pulled pork, the Shawnee Southern is a sandwich that features both! When offered, their $15 slab special for their pork spare ribs is a steal! Whatever you do order, polish it off with a nice, cold beer. Their bottle prices are hard to beat!

Sierra BBQ - Est. 2024

In October, 2024, Sierra BBQ was launched as a “laid-back sister concept” to the incredibly popular Lenexa steakhouse of the same name. It is actually housed in the former location of the sister restaurant. With seating for 50 and an open kitchen, Sierra BBQ offers a comfortable and intimate barbeque dining experience.

So, What Do I Get? There’s a lot to try with this menu and a fair amount of flexibility. If you’re a rib person, Sierra offers both spares and babybacks. There is a richness to the pork that shines through with every bite, and they are on the softer end of what’s acceptable texture-wise. The hand-crafted sausages are incredibly popular! The standout meats are the smoked brisket and turkey. The thick-sliced brisket, done in the classic Kansas City style is smoky, tender, and has a fantastic bark. The turkey is deli-sliced with a smoky decadence and the right balance of moisture. Try either meat, or both, stacked high on a sandwich or as a topper to one of Sierra’s mammoth baked potatoes. When it comes to the sides, the beans and cheesy corn are both winners. The thick, gooey cheesy corn may be some of the city’s hottest as crystals of jalapeño explode in every cheesy bite. The beans are more hearty, littered with meat scraps, and rough around the edges which gives them a blue collar charm.

Smoke ‘n Roll is a small carryout place located next door to the KC Neighborhood Bar. They specialize in homestyle, comfort food-inspired barbeque. Originally, a pop-up concept at Merigold Liquor Outlet, Smoke ‘n Roll now operates a carryout-only space and a food truck. Smoketown BBQ is a family-owned Kansas City-style barbeque joint in Overland Park. While you do order at the counter when you walk in, the restaurant has a vibe that lies somewhere between a sports bar and a small-town family restaurant.

So, What Do I Get? This is a place for specialty sandwiches! The Smoketown Throwdown, served on a branded “ST” bun is very popular. You may recall that The DOMinator was #6 on my list of the best specialty sandwiches in the city. The Texas Toast is so great that I routinely sub out the bun for the toast in my sandwiches. Speaking of The DOMinator, the strength of that sandwich is the beef burnt end which is the star of the menu. These beef burnt ends are some of Kansas City’s best. They are the ideal “meat-mallow”! Smoketown’s also a great place for turkey. In a platter or on a bun, these two meats are an absolute must. The side dishes are all fantastic but the Mac & Gouda and Pepper Jack Poppers are incredibly good, and of course - that Texas Toast! Speaking of the Mac, consider the Mac & Piggy (Mac & Cheese topped with pulled pork) as a nice change-of-pace entrée. With a little bit of their sauce, it can be quite magical.

Based out of Olathe, Smoak Craft Barbecue is a pop-up / traveling barbeque concept that specializes in craft barbeque. Their real strength lies in the overall flexibility of their menu.

So, What Do I Get? Like many craft concepts, where Smoak is at their best is the brisket. It’s so rich and tender with such a pleasing rub, that may have some coffee to it, on the outer edges. Rich, tender, and thick, it is everything that I could ever want a brisket to be. Similarly, when offered, the pork belly is very special. Thick-cut and sliced, there’s nice balance of lean and fat. The sausages have a nice pop and are exactly what a smoked link should be. As for the sides, the beans and the Apple Kale Slaw are the way to go. The slaw almost takes a Waldorf salad-like approach. On the surface, the various ingredients plays as sweet and sassy, but then the roughness of the kale balances it out and gives the dish an edge that I never knew a slaw could have.

Buyer Beware? As is the case with any pop-up or trailer, sell-out is always a concern. Arrive early.

Black Belt Bar-B-Q^ - Est. 1997
1101 N. 4th Street, Leavenworth, Kansas

Black Belt Bar-B-Q is a seasonal food truck in Leavenworth, Kansas. It is traditionally parked at the address given in the parking lot of the Fairfield Inn & Suites during the spring and summer months but usually closes for the season prior to Halloween. Originally a Westport restaurant, Black Belt fuses together Jamaican flavor with Kansas City barbeque tradition.

So, What Do I Get? There is a lot to love about the deep-ebony charred meats from Black Belt. The thing that makes them unique is also what they do best. The Jerk Chicken and Jerk Pork are both exceptional. Each with their own brand of heat, this is a gum-tingling spice born of intention and flavor. The sauce that comes on the side however is not for the faint of heart. While it won’t be listed on the menu, the Two Meat Plate is the way to go so you can sample both alongside the potato salad and baked beans. The sweetness of these terrific sides will help pacify the heat. The sooty and succulent rib tips are also an excellent order. As one of a small handful of places to regular offer a smoked Turkey Drumstick, this is a great order as well.

Buyer Beware? Black Belt is often a fixture at local festivals and fairs which means they may not always be outside the Fairfield. If you’re making a point to go visit them, it may be wise to call the Fairfield Inn ahead of time to make sure the little white trailer is parked outside.

Low-N-Slow Midwest BBQ - Est. 2020

Low-N-Slow Midwest BBQ is a small, neighborhood barbeque joint located along the main stretch of Lansing, Kansas with a very basic barbeque menu. The majority of their business is to-go orders but they do offer a dining room that seats 20 - 30, and a large patio space.

So, What Do I Get? Few places offer pulled chicken, and even fewer do it right. The pulled chicken at Low-N-Slow has a wonderful rub and nice texture. Getting a pulled chicken sandwich is a great choice here. Similarly, the smoked black forest ham and the brisket are fantastic. The pork belly burnt ends are massive, meaty, and incredible. There is good reason it sells out quickly A ham and pork belly combo sandwich, or any combination of these meats on bun, would be a most excellent order. The smoked chicken wings are some of the better ones you will find in KC. The crunch of the skin is delightful. For the sides, the fried okra is tremendous. Not too greasy or salty, this is what okra should be. The mac ‘n cheese and beans are also quite nice. The crinkle cut fries are exactly what they should be. Ordering them loaded with a smoked meat is a common, and advised, order.

The Gospel of Linn

Linn County is one of the smallest counties in the Kansas City metro with a population of less than 10,000. Coincidentally, it was named for Lewis Linn, a Senator from Missouri. It is comprised of Blue Mound, La Cygne, Linn Valley, Mound City, Parker, Pleasanton, and Prescott. Mound City is the county seat.

Mound City was the home of John Hughes, the famed Texas Ranger who many believe to be the inspiration behind The Lone Ranger.

At the time of publication, Linn County is a wasteland devoid of Kansas City barbeque and brings their state much shame.

The Gospel of Miami

Miami County is named for the Miami tribe and is comprised of Fontana, Louisburg, Osawatomie, Paola, and Spring Hill. Paola serves as the county seat. By way of Spring Hill, Miami County was the home of Gary Burrell, who co-founded Garmin.

The BBQ Shack is a food truck in Paola, Kansas known for their speedy, caring service. Prior to being a food truck, they were a dine-in restaurant and featured on Diners, Drive-Ins, & Dives back in 2007.

So, What Do I Get? First things first, you have to order some ABTs (Atomic Buffalo Turds). This appetizer is a smoked jalapeno stuffed with cream cheese and smoked pulled chicken, wrapped in delicious, smoky bacon. When available, they are a smoky, spicy delight! This truck offers some of the city’s elite burnt ends. Plump, tender, and with a surprising pop and an exquisite char. They need no sauce. The turkey and pulled pork are smoky, tender, and exactly what each meat should be. The ribs are some of the larger ones you’ll find and have a nice flavor and texture. When it comes to the sides, the cheesy potato casserole is terrific and BBQ Shack does a nice BBQ bean.

Buyer Beware? Pay attention to their Facebook. While they are regularly at the Family Center Farm & Home, sometimes events call them away. Luckily, BBQ Shack stays on top of their Facebook page.

K & M Bar-B-Q - Est. 2007

K & M Bar-B-Q in Spring Hill takes their name from the owners Ken & Michelle. While they claim to have been serving their barbeque for over 30 years, K & M has been in their current location since 2007.

So, What Do I Get? The ribs are a perfect example of what a classic Kansas City cut should be. The tips are tender and melt in your mouth but despite being a softer rib, it still clings to the bone. The brisket is very traditional but such a nice cut rich with beefy flavor. If you’re looking for a sandwich, give the BBQ Philly, which features the brisket a try. A half-and-half side order of the fries and onion rings is a veteran move. The beans are wonderful and exactly what a Kansas City pit bean should aspire to be.

Buyer Beware? As great as the barbeque is, this is a great place for non-barbeque favorites as well. The pork tenderloin is one of the better ones in the metro.

Louisburg BBQ & Brews - Est. 2017

Located near the famous cider mill, Louisburg BBQ & Brews is one part barbeque, one part bar, one part pizza shop, and wholly delicious. In the past few years, they have rebranded as they were originally Big L’s.

So, What Do I Get? The pulled pork is absolute perfection. You could not ask for a better combination of flavors and textures. It’s some of the best in town. The star of the menu is the massive Spare Tire sandwich. The triple decker is a pile of ham, brisket, onion straws, and Swiss cheese with a center bun for good measure. While nearly impossible to get a bite, this is about as good as specialty sandwiches get. The Spare Tire is also available as a barbeque pizza! The smoked turkey is amazing. The spare ribs are a traditional cut and they are gigantic, but they are cooked exactly as they should be. As far as sides go, the beans are wonderful The cheesy corn is easily top five in KC. The handcut fries are just ideal. And whatever you do, get a nice, cold 24 ounce mug of beer to wash it all down.

Buyer Beware? This is also a pizza shop. The opportunity to get quality pizza with smoked meats may be too much for some to pass up.

Timber Creek Bar and Grill

Located in Louisburg, Timber Creek Bar and Grill is a large event space, sports bar, and restaurant with a large lodge-style motif that offers a full-page barbeque menu. It’s a beautiful space with several TVs and plentiful food and drink options.

So, What Do I Get? There are so many quality sides and appetizers to choose from! The tots and fries are both excellent and offer a loaded options that includes gooey queso, shredded cheddar, chives, bacon, and sour cream. This is a must. They also do a nice barbeque bean. As for the meats, the best option of the smoked meat selection is the pulled pork. As for the meats, the pulled pork is the strongest choice in the line-up. The Pork Carolina sandwich is the play here.

Buyer Beware? This is clearly a restaurant first. While a banner within boasts that the “best smoked meats” are clearly at the creek, there are doubts about the process. The meats have good enough flavor but it is clear they are being re-heated prior to serving based on the scorching hot temperatures. Your best bet is to order the more popular non-barbeque offerings. Also, every single barbeque meat on the menu comes pre-tossed in sauce.

We B Smokin’ may have the coolest location of any barbeque joint; as it is located at the Miami County Airport. Inside a room that is covered in competition ribbons, airplanes, and Kansas City Chiefs' memorabilia, diners can expect to look at the runway, and small planes in taxi, as they dine.

So, What Do I Get? Go for the turkey sandwich with a side of the potato salad. The potato salad has a nice dill flavor that is terrific and such a perfect texture. The turkey is a solid example of what smoked turkey should be.

Buyer Beware? OF EVERYTHING ELSE. Like all the Chiefs’ memorabilia, I legitimately wonder if the ribbons on the wall were purchased. While that specific notion is ridiculous and pure hyperbole, the point is it’s that difficult to imagine this same joint ever produced a product worthy of winning any competition. The beans are a soupy mess that taste like straight maple syrup. The ribs are ginormous and well beyond overcooked. The brown sugar in the rub gives each bone a nice bark but it’s not nearly nice enough to redeem this rib. The sliced pork, to put it nicely, is abysmal. The one time that I had it, the meat not only looked gray and unappetizing but it had the unmistakable taste and texture of being freezer burnt. While the location is such a cool and fun concept, the horrid food should be enough to keep anyone away. If that doesn’t do the trick, the lack of anything that resembles hospitality or customer service should.

The Gospel of Wyandotte

Wyandotte County is named for the Wyandot tribe and located directly across the Kansas River from Kansas City, Missouri. It is comprised of Kansas City (KS), Bonner Springs, Edwardsville, and Lake Quivira. Kansas City serves as the county seat, although the city and county famously share a unified government.

By way of Kansas City, Kansas, Wyandotte County is home to Eric Stonestreet of Modern Family fame. It is also the home of Children’s Mercy Park, the home of Sporting Kansas CIty and the KC Current, and Kansas Speedway.

American Royal Barbecue - Est. 2020
Children’s Mercy Park, 1 Sporting Way, Kansas City, Kansas

The American Royal Barbecue stand inside of Children’s Mercy Park represents a unique partnership between Sporting Kansas City and the American Royal. Located behind Section 127, the stand serves a very simple, basic barbeque menu that is made and smoked in-house.

So, What Do I Get? As expected of any stadium stand, the menu is quite limited. That said, the pulled pork is the star of the smoked meat line-up. It’s smoked and tossed in a sweeter Kansas City style sauce. The Hawaiian Pulled Pork sandwich (topped with slaw and a pineapple slice) is the way to go. As far as the side dishes go, the baked beans seem to feature that same sauce as the pork and are a nice accompaniment.

Big Q Bar-B-Q- Est. 1986

The Q in Big Q Bar-B-Q stands for Quick. As in, the famous Quick’s Bar-B-Q that operated for over 50 years in Kansas City, Kansas. Big Q continues that family tradition of Kansas City style barbeque made in a wood-fired oven at their Armourdale restaurant. They may also be the most affordable local barbeque place in the entire metro.

So, What Do I Get? As far as the meats go, stick with the sausage or the turkey. The turkey is deli-sliced and the giant sausage link is butterflied. Both can be served on a halved Roma bakery bun. There are some quality sides here but the star is the pasta salad. Rotini noodles tossed in an Italian-style dressing with fresh chunks of tomato, red onion, and cucumber, it has an aftertaste reminiscent of a barbeque rub. The potato salad and the beans are nice side options. They also have a plethora of deep fried items and with the ability to get a mix of two fried appetizers for five dollars? That seems like a good way to go. Whatever you do, get dessert! They offer a nice variety but the giant slices of carrot cake with a thick layer of cream cheese frosting is some of the best carrot cake you’ll ever have! The pies are nice, but the carrot cake is special.

Buyer Beware? The widely popular spicy fries aren’t spicy. In fact, they’re a run-of-the-mill seasoned waffle fry. They’re good, just disappointing when you’re expecting something unique. You know how they say, “You get what you pay for”? Big Q is the epitome of that. The sliced pork is leathery and has a displeasing twang on the back end. The brisket is rubbery and lacks any kind of smoke flavor. The ribs are way too chewy and like the brisket, no smoke flavor. The macaroni and cheese is watery and also lacks flavor. On top of all that, most of the items on the menu are served at room temperature, or below.

Hickory Log Bar-B-Q is a new school Kansas City barbeque joint with a very old school feel. They pride themselves on their ability to smoke meats in a very traditional local style. While the ownership has changed in recent years, and the menu along with it, this spot still feels very classic Kansas City. The owners could not be kinder or more present, and the service is top-notch. This just feels like an old-time small-town BBQ joint.

So, What Do I Get? This is a fantastic place for sausage. It has such a wonderful flavor and texture unlike anything else in the city. The sliced style, which is not that common here, makes sausage on bun a perfect lunch option. The brisket is another strong option. The dry, ribbon style pieces are a throwback to the earliest traditions of KC ‘que. A double sandwich with the brisket and sausage or turkey and sausage is a great way to go. If you’re a beef burnt end, Hickory Log’s gritty take on the dish is sure to please. The rub on the meats is exceptional! For the sides, the vinegary “Croatian Style” they were once known for is sadly gone but the creamy style is just as good. Fresh, crunchy, and overall marvelous, this is an excellent slaw. They have a variety of deep fried and traditional side items but the molasses-forward beans are the other side of choice beyond the slaw. Whatever you do, try to save some room for dessert and what ever cakes or sweet treats they have to offer on a given day.

Buyer Beware? First of all, anything on a bone. While the rub is good, not even it can save dried out meats like the pork ribs or chicken. Another thing to beware of is the platters. Sandwiches should be the way to go. This may be the only spot in the metro where platters don’t include at least one side. It’s really easy to find yourself spending north of $40 for a dinner here if you’re not careful.

Holy Smoke BBQ - Est. 2022

Holy Smoke BBQ is a family-owned barbeque spot in KCK. In late 2022, they opened their current location, a small, single-room order counter designed to be a place for to-go orders but one that does have extremely limited dine-in seating in their waiting room. It is a new-school barbeque with a little bit of an old-school twist.

So, What Do I Get? There are a lot of great options on this menu but it’s the wings and the rib tips that are extra special. The rib tips are simultaneously crackly and melty and have an incredible flavor. The smoked wings are everything that you would dream they could be. All of the meats are winners as it’s also a fine place for ribs and sliced meats. The Dotte Box is a meat-only order of ribs, wings, sausage, and rib tips and can easily feed two to three people. The melts (sliced smoked meat in a grilled cheese) are incredibly popular for good reason. Consider ordering the perfectly griddled sandwich with brisket or turkey. When it comes to the sides, the beans and the macaroni salad are great but the potato salad, covered in paprika, is truly elite.

Buyer Beware? There are only about a dozen seats available for dine-in seating. This is certainly a place for to-go orders. Understanding that, tread with caution when it comes to the fries and onion rings. This has nothing to do with the quality or flavor, just the physics of what happens to a hot batch of French fries when that heat is trapped in a to-go container.

When it comes to Joe’s Kansas City Bar-B-Que, the accolades speak for themselves. Most notably, it was the only barbeque joint included in Anthony Bourdain’s now-famous 13 Places to Eat Before You Die. The iconic Shamrock gas station is always good to have a line out the door and was one of the first in a wave of competition-style barbeque joints that really served to revitalize and grow the scene. Of course, we’re certain that Joe’s is hanging their hats on their mentions in three different editions of Devan’s Dozen.

So, What Do I Get? There are so many great choices but the correct answer is this. Grab a friend and get in line at 10:30am on a Saturday morning. Order a Rocket Pig and a Z-Man so you can cut each sandwich in half and enjoy both. (They are both top four barbeque sandwiches after all!) While you’re at it, order a Half Slab Dinner with a sack of fries and split both. Enjoy some of KC’s most popular fries while dining on some of the best ribs in the nation. If you want to come off as a real vet, mix a 2:1 ratio of Joe’s Original sauce with the Night of the Living Dead sauce to have the ultimate fry dip. If you must deviate from this order, go for a half pound of beef burnt ends, or a half chicken, and a side of dirty rice.

Buyer Beware? How quickly you are expected to dine and vacate your table so someone else can enjoy some world-class barbeque.

Jones Bar-B-Q - Est. “1970 … Something”

Jones Bar-B-Q is a small window with outdoor seating that is run by two of the city’s only female commercial pitmasters. The Jones Sisters continue a tradition of serving very traditional Kansas City barbeque that started with their father, Leavy B. Jones, Sr. Both the sisters and their restaurant rose to local and national prominence in recent years after appearances on Steve Harvey’s Steve and Season 3 of Netflix’s Queer Eye. Due to their popularity and the long waits, many people call their orders in.

So, What Do I Get? The first thing that turned Queer Eye’s Antoni Porowski on to Jones Bar-B-Q was their sauce. I can understand why! The closely held family recipe is one of Kansas City’s most iconic and best barbeque sauces. Their potato salad is also some of the best you will find in town. It’s exactly what any potato salad lover should want from a BBQ joint. The fries are crinkle-cut and always cooked to golden perfection. If you do get a chance to try or order some of the Jones Sisters’ pound cakes, do it! They will put anything your grandmother made to shame. As for the meats, Jones takes a lot of pride in their house-made sausage as they should. It has a wonderful profile and a delightfully thick casing. The ribs are of the babyback variety and on the softer end of the acceptable texture. On the other hand, the rib tips being this soft makes them virtually perfect and a must-order.

Buyer Beware? Of the sell-out model. If you don’t see a line at 12:30pm on a Friday? It’s because they’re likely already sold out of most their stock. Arrive early, or even better, call in your orders ahead of time. Everything comes drenched with sauce which may be a negative to some but it’s hard to say that when the sauce is this good.

Jousting Pigs Craft BBQ - Est. 2019

UPDATE: For undisclosed reasons, Jousting Pigs permanently closed their Legends location, without warning, in March of 2023.

Many would say that Jousting Pigs was among the very first in a wave of craft-style barbeque that has since widely invaded Kansas City. The original Jousting Pigs was located inside of Three Halves Brewing and opened in 2019. They moved all operations to their second location, located in Legends Outlets, in late 2022.

So, What Do I Get? Starting with the sides, the potato salad and cheesy corn are among the best this city has to offer. Each offers their own unique take with the potato salad having more of a bacon / ranch emphasis and the cheesy corn having a nice bite that comes from green chilis. If you’re looking for a sandwich, The Jester was named among the best specialty sandwiches in the city by this publication. The combination of brisket, Texas toothpicks, and a house blend of Gouda and Havarti is inspired. When it comes to the meats, the brisket, turkey, and pork belly are all elite.

Buyer Beware? Nothing worth noting.

KC Turkey Leggman - Est. 2020
1916 Quindaro Boulevard, Kansas City, Kansas

KC Turkey Leggman originated as a bit of a one-man pop-up at 39th and Paseo around 2017. In the years that followed, the concept became a food truck in 2020 and then opened a brick-and-mortar location in the spring of 2023. Located in the Northwest neighborhood of KCK, the Leggman is a modest, carryout business with a rotating cast of offerings and specials, but the namesake smoked turkey leg reigns supreme.

So, What Do I Get? As the name implies, everything begins and ends with the smoked turkey leg. Not only is this one of the few barbeque joints in the metro that regularly offers a smoked turkey drumstick, but the Leggman does it better than anyone. The club-sized drumstick is massive, meaty, smoky, tender, and enough food for two. The Bussdown Legg offers the giant drumstick covered in a mountain of delicious, gooey four-cheese mac. The smoked chicken wings are also a hit, and some of the better ones in town. When offered, the turkey ribs are especially unique. The textures and flavors make these poultry bones something very special. Not only is this the only place in town that offers turkey ribs, it may be the only barbeque joint in Kansas, Missouri, or anywhere to do so. They’re definitely a rare find. Anything that the Leggman does with a bird seems to be poultry perfection. Whether it is with the Bussdown or on the side, the four-cheese mac is a must. Also be sure to wash it all down with a glass of Kansas City-made Douglas Lemonade!

Buyer Beware? The wait time. This is a popular spot in KCK and very much seems to be a one-man operation. It is strongly advised that you call in your order in advance so you can minimize your wait.

Quentin’s BBQ & Sides - Est. 2022

For years, they operated out of a food truck in Spring Hill, Kansas called Scout’s BBQ. In 2022, they made the decision to open a permanent location in Bonner Springs at the Old Mill and name it for the owners’ son. Thus, Quentin’s BBQ & Sides was born.

So, What Do I Get? The burnt ends are massive with an exquisite char and oh, so delicious! The best play on the menu is the “Legend”. Offered as either a sandwich or Mac N Cheese bowl, the Legend features a choice of meat and crispy onion straws and/or jalapeños. With all the fixings and sliced brisket on the grilled, soft potato roll, this is a perfect specialty sandwich. The pulled pork is also a strong option for a sandwich, Mac N Cheese topper, or all alone. The Mac N Cheese, Loaded Potato Salad, and Coleslaw are all fantastic sides. The Mac N Cheese is rich, gooey, and has nice flavor. The Coleslaw utilizes cranberries and slivers of almond to give this a profile that is wholly wonderful and rather unique in KCQ. Add a side of the hand-dipped onion rings for a special treat.

Buyer Beware? My only knock on Quentin’s would be that they do not offer a traditional multi-meat platter which is a must for the “BBQ Tourist”. That said, they do offer all of their meats (minus ribs) by the quarter pound so you do have options to build your own such plate and end up at a similar price point.

Roscoe’s Barbeque - Est. 2010

Located a little off the beaten path in Edwardsville, Roscoe’s Barbeque is exactly what most feel a barbeque joint should be - straightforward, no frills, and with a small town, Midwest nice feel. In early 2023, the original owners, Roscoe and Mariann Davis announced they were closing down the restaurant. Luckily, in early 2024, the next generation, sons Roscoe III and Nick, announced they were bringing back Roscoe’s in the same place with all the same recipes and the amazing level of service they are known for.

So, What Do I Get? No matter what you order, cheesy corn is the obvious side. It is simply divine and some of the best in town. It would have made my top five had Roscoe’s not been closed during my last round of Fountain City Superlatives. The pulled pork and turkey are great choices. The turkey is thin-sliced, moist, and full of flavor. The best meats on the menu, without question, are the beef options. The burnt ends are excellent and they do a nice brisket. The beans are a solid option and the sour cream-forward Frankie’s Taters, with corn flake topper, are always a nice side. The French Fries are crinkle-cut style and always perfectly fried (as are the tots!). They are a wonderful conveyor for their sauces. If you are a fan of the fall-off-the-bone rib, there’s a chance that these will be some of your favorites in town. For me, a bit more firmness is key. The cheesy corn though, that’s where it’s at.

Rosedale Bar-B-Q - Est. 1934
600 Southwest Boulevard, Kansas City, Kansas

Best as can tell, Rosedale Bar-B-Q is actually the oldest continuously operated barbeque joint in the Kansas City metro. Opened in 1934 as “The Bucket Shop”, the stand originally sold hot dogs, as well as half gallon buckets of beer for a quarter. By the following year, the original owners Anthony Rieke, his wife Aida, and brother-in-law Tony Sieleman had fired up their barbeque pit in Rosedale, Kansas. The rest, as they say, is history. Not much has changed over the year. It still has that neighborhood feel and small-town hospitality. They still sell the hot dogs and beers, and of course they sling the kind of barbeque that keeps customers coming back.

So, What Do I Get? The Belt Buster is an iconic Kansas City sandwich - three meats of your choice, tossed in sauce, and served on a pillowy soft, split-style Hoagie roll. It’s also available as a platter. The kielbasa-style sausage, beef burnt ends, and ham are the strengths of the Rosedale line-up and are strong choices for the Belt Buster. However, if you like the sausage and burnt ends, then the Dynamic Duo may be the better play. Introduced in 2023, this sandwich has beef burnt ends, a split sausage, fajita peppers, fried onion straws, and fried jalapeño bottle caps all held together by gooey Pepperjack on a hoagie roll. This is a top notch specialty sandy. As far as the sides go, the cheesy potato bake is a strong option but the fried sides reign supreme here. The burnt end basket with crinkle cut fries is a phenomenal value. While they have a strong line-up of deep-fried sides, and they’re all done well, I would be remiss if I did not mention the fried green tomatoes. Available seasonally, this is one of the best versions of the dish in town. For many regulars, a Rosedale meal is not complete without an orange or strawberry soda.

SLAP’s (Squeal Like A Pig) BBQ - Est. 2013

Located within the Strawberry Hill neighborhood of KCK, SLAP’s BBQ is fruition of a dream that began with brothers Mike and Joe Pearce and their Squeal Like A Pig competition team. In less than a decade, SLAP’s has continued to rack up accolades both on the competition circuit and off of it as they have grown into a favorite for much of the city. Known for their dry-style smoked meats and a wide variety of sides, SLAP’s BBQ is one of KC’s best.

So, What Do I Get? What shouldn’t you get? It’s all so fantastic! For a first-timer, I would say bring your appetite (or a friend) and order the Sampler Plate. Take advantage of the option to add-on some rib bones, burnt ends, and a smoked chicken hindquarter. Yeah, you’ll have some leftovers but who cares? To narrow things down though, The Three Little Pigs gives you a chance to try the pulled pork and some of the best ribs and best sausage (the jalapeno cheddar) in all of KC. A Burnt End Combo with one of their sausage types or a smoked chicken hindquarter is a similarly strong plate. Or, just get a half slab of the ribs! These are some of the best ribs in the city, and the nation! There’s a lot of excellent sides to choose from but make sure one of them is the Baked Potato Casserole. It’s homestyle, cheesy goodness. Of the fried sides, the hushpuppies reign supreme. However, the fries, sweet potato fries, cheese curds, and jalapeno bottle caps are all excellent. When in season, the chili is also a must. Seriously, whatever you pick - you will be right.

Buyer Beware? It may seem that SLAP’s only has two house sauces, a sweet and a spicy, but you would be wrong. They have an Alabama-style white sauce that is available on request. It is the perfect dipping sauce for the jalapeno cheddar sausage or for any of the deep-fried sides.

2Hot2Handle BBQ^ - Est. 2011

Based out of KCK, 2Hot2Handle BBQ is a small barbeque food truck and catering operation that is owned and operated by a husband and wife team.

So, What Do I Get? The first time that I ate at 2Hot2Handle, I just happened upon it at a food truck event. When I asked the person what side I should order, the immediate answer was, “White Cheddar Mac all day long sir!” It was a great call. This food truck’s take on macaroni is the best thing on the menu. If you must go with a smoked meat, the pulled pork is preferential over everything else. It is a shame they do not offer the White Cheddar Mac with a pulled pork topper. That said, they do offer their Ultimate Fries topped with the mac, beans, pulled pork, and sauce, so that may be an option to keep in mind.

Buyer Beware? This is about as average as food truck barbeque gets. They have no sauce to call their own and so they default to the always-safe Sweet Baby Ray’s. The Belly Buster sandwich which is much hyped is a mess or pulled pork, brisket and nothing else. It would be fair to call this mediocre for KC barbeque. However, the people in the truck are so lovely, and the service is so fantastic, that they are worth a visit for that reason alone.

Woodyard Bar-B-Que - Est. 2005

Woodyard Bar-B-Que has one of the best stories of any local BBQ joint. As the name implies, they are a woodyard. For years and years, they provided wood to the pitmasters. At one point it dawned on them that they knew how to smoke great meats and they had all the best woods. Since opening, the barbeque restaurant inside of a house has been one of the city’s elite.

So, What Do I Get? More than anything, Woodyard is known for their spare ribs. They’re easily a Top 5 rib in Kansas City. If you’re more of a babyback rib person, that’s a fine choice here as well. When offered, they also do a fantastic smoked wing. On the sandwich front, the Triple “P” piled high with pulled pork, ham, bacon, and provolone is one of the better sandwiches you will find. As for the sides, the potato salad may just be Kansas City’s best! The cheesy corn and the burnt end chili are also top-notch! Truth be told, this is a top-tier BBQ joint and it’s almost impossible to go wrong here.

Buyer Beware? They do still sell wood. If you are a home-smoker, pull around back and check out their variety.

Wyandot Bar-B-Q #1* - Est. 1977

Wyandot Bar-B-Q is a family-owned barbeque joint that is as traditional in the Kansas City barbeque sense as it gets. A favorite for many Kansas City natives, the famous Eric Stonestreet among them, Wyandot is known for large portions and friendly service.

So, What Do I Get? Rib tips are a staple of the old-guard of Kansas City barbeque but not often found in the current scene. Thankfully, Wyandot Bar-B-Q has them and they are one of the best examples of rib tips in the city! They are a balance of tender, chewy, and flavorful in all the right ways. The beef burnt ends have such a unique, truly burnt taste. For those that crave these burnt ends, nothing else will ever do. For the sides, I just recommend a crispy order of their fries to soak up their delicious sauce.

Buyer Beware? Your meat is going to come sauced. Luckily, they don’t drench it. But if you prefer it dry, you may want to say something.

And so it came to pass that after Henry Perry left behind the barbeque kingdom that he built here In Kansas City, the Bryant Brothers, and Arthur Pinkard, went forth sharing that good food with all who would eat it. They continued to smoke the meat, low and slow, in the manner which Henry Perry first taught them. They taught others to do the same. Thus, the kingdom was not only preserved, but it grew.

In the earliest days of barbeque, Kansas City shared a common style. As time passed, that too changed.

As for me and my house, we will serve the pork.

Today, there are over 120 barbeque establishments in Kansas City! Of those, nearly 50 are on the Kansas side of Stateline. Some of them serve their barbeque in a gas station, from a truck, as part of a food court, or inside a shack. Others serve their barbeque carefully plated and with linen napkins and tablecloths.

Some make their sauce with tomato while others use molasses, vinegar, mustard, or an aioli as their base. Some of them use no sauce at all!

Some pitmasters were classically trained by the finest culinary institutions. Others learned it from their own family tradition passed down from one generation to the next. And still there are others who were self-taught or who came to hone their skills on the competition circuit. Many pitmasters prepare their barbeque in the traditional Kansas City style first established by Perry. Many expanded upon Perry’s method for those who would come after. Others prepare their meats in the style of Texas, Carolina, Georgia, Alabama, or Memphis. Some draw inspiration from the farthest reaches of the earth, incorporating international flair into their barbeque.

Regardless, each one of these pitmasters carefully and wonderfully makes Kansas City barbeque. We know that full well.

It is because of these pitmasters, and every generation who came before and is to come, that Kansas City was the World Capital of BBQ yesterday, is the World Capital of BBQ today, and will continue to be the World Capital of BBQ forever.
